Hi, I hope this reply is not too late. The main platform (2) is the best for viewing but if you are taking photos i suggest crossing the footbridge to platforms 3 & 4 or beyond.
I tend to visit for steam specials only these days so i am not too familiar with the freight workings but you do get 66s passing through.
The east end of the station can be appealing with the castle as a backdrop.
