Hi Twister, welcome to the forum.

I live in Hastings and I know there's not a lot of freight down here unfortunately. There is regular trains to & from the Gypsum Mine at Mountfield so these can be seen from Robertsbridge and northwards.
The other place I can recommend is Ashford International as there are usually quite a few freight movements to & from Dollands Moor yard (for the Channel Tunnel).

The best advice for these locations (and any others you might try) is to use this website: http://www.realtimetrains.co.uk/search/advanced
Here you can put in your chosen location (stations, junctions, depots etc.), the date and times of your visit and this will show all train movements. Just one note of caution though, the freight & light engine movements listed on realtimetrains are often listed as 'runs as required - this message will disappear if the train is activated in the system'. This means, if the message is displayed, then the train is not scheduled to be running, but this can change at fairly short notice.
Also, if you are ever using this website to find a main line steam special, they don't list these as 'steam' - it will always be listed as 'diesel-hauled'.
On that note, if there is an interest in steam on the main line, then there is a tour planned for December 12th to be running from London-Eastbourne & returning via Hastings. http://www.uksteam.info/index.htm is the best website for main line steam.
